Unique

Over and over I’ve been reading – in my daily devotions and in the Word – about how to be the woman God created me to be and to do the things God created me to do. It was all last week, like really, almost every day.

The one thing that really got me thinking was this question… what things make me unique? The writer of the devotion asked several other questions such as what do I like to do? What are my strengths and weakness’? Those didn’t hit the same nerve. Those are questions I’ve been asked by others since high school and have been asking myself since about then too, but this unique question – that was a bit harder for me.

There aren't enough parameters for this question. Unique how?

Like how I look?

Or how I dress?

Or how I talk?

Or my talents or abilities?

Or just in general?

Or how I parent my kids?


I didn’t know how to answer the question and I started to get a bit stressed out about it! Now, I don’t think the idea of the devotional was to stress me out, so I decided just to ponder the question and not feel like I needed an actual answer right that minute. I’ve spent a lot of time thinking about it since then. I’m still not sure I’ve come up with the "right answer", but I think I’ve come to understand that there might not BE a right answer but that it might be a process.

A process of seeking out what makes me unique.

A process of seeking God's will for me.

A process of becoming who God wants me to be.

And that I learn more each day.

Some days aren’t good. I don't think I do well in becoming more like Christ, more who He wants me to be. Some days I see that what makes me unique is that I loss my cool with my kids and I’m laden with guilt about yelling at them (For heaven-sakes, their just small) and I know guilt isn't good. Then there are some days I feel so stressed out about making changings that it all seems overwhelming - like it's too much and I'll never be who God created me to be! So I don't change at all!

BUT then there are days when I get up and read this in the Word:
“Forget the former things; do not dwell on the past. See, I am doing a new thing! Now it springs up; do you not perceive it? I am making a way in the desert and streams in the wasteland.” Isaiah 43:18&19
And I know then that what makes me unique is that the Lord Jesus loves me and I am his child and I don’t have to dwell on the past, I can live today in Him and be who He wants me to be in His strength, not on my own, but through Him - TODAY. Tomorrow we can start again new, Keeping the good from today and adding it to the new thing that God will do tomorrow!

That easies the stress of how do I change? How do I become who He wants me to be? I trust Him! His grace is sufficient!! He is doing a new thing!

And for that I am more grateful than words could ever say.

Correction

Just like in the newspaper, when you print something wrong - you must correct it. I printed something wrong, so this is the "correction edition".

The Mother's of Multiples sale is in August. It was previously printed with August dates, and then in the daily times and dates it says September. The sale is in August, so the daily dates should read August as well.

It's a good thing I don't work for the newspaper, ain't it?!!?

Consignment Sales

Unbelievable – it’s fall consignment sale time! It’s already in full swing here at the Winslow House of “Too Small” Stuff. I’ve had clothes, shoes, blankets, hats, mittens, changing pad covers and a whole bunch of other assorted stuff that we’re not gonna use any more out on my dining room table for more than a week now! It’s fun, and I love it! I love tagging all the stuff that doesn’t fit anymore knowing that I’ll get a small amount of money back in return for my hard work!

Oh, what to spend my money on after it comes?!?!

I did get a bit emotional, for some reason, tagging all of Avery’s Christmas dresses from last year! They are so cute, and for about 60 seconds I didn’t want her to get any bigger or grow up any more! But that feeling passed as I thought about all the cute stuff yet to come along with all the fun she’ll bring as she grows!

Anyway thanks to my cousin Shannon – you can take a peek at the area sales. If you are around here and want to go with me to any of them – let me know! I’m consigning at the Covenant Church sale as well as the St. Pauls sale so I’m gonna get rid of my stuff and bring someone else’s home from these 2 sales for sure!! I love consignment sales!!

Guests

My parents are coming for a visit this weekend!! YIPPEEEEEE!!! We're all so excited here, we cannot stand it! Luke asks every day – “Is today the day?” “Do Nanny and Grandpopppy come today?” That day is almost here!

Having people over is always a wonderful reason to clean - really clean the house. I've been doing that some at a time this week! It's nice to have the base-boards and ceiling fans dusted! And I hate to dust, so for me that's big!

It's nice to have the house clean and smelling good - even if it only last for 30 minutes before the kids unload their toys and Jane sits in the middle of the living room floor and drops enough fur that I begin to wonder how she has any left?!?!

Gatlinburg

I like to travel. If you’re a long time reader you already knew that. But I do love to travel. And I’ll go just about anywhere it doesn’t have to be big places (like some of the places I’ve been) like Maui or Las Vegas (we love Las Vegas!), or Sapphire Valley, NC (which isn’t that far, but we were there a whole week) but I’m happy to take smaller, closer to home trips such as our recent visit to Cornelius. We’ve also gone on a whim – obviously before the kids – up to Blowing Rock and spent a couple of nights, and of course to the beach.

I like to have a trip or something fun planned to look forward to – it helps with the “daily-ness” of life. Right now we don’t have trips planned until October which seems like forever away from now, but it’s still something to look forward to – just not in the too near future.

Then the other day I was thinking and talking to David and I said “why not go to Gatlinburg for a couple of days?” So I think Nanny and I are going to try to meet in Gatlinburg for a couple of days before the kids start back to school! Fun! That’s much closer and gives me something to look forward to break up the everyday stuff! I do so love to travel! This will be the first time I’m taking the kids on a 4 hour trip by myself, so that’ll be interesting I’m sure! But it gives me a good idea of how it would go to take them both all the way to my parent’s house – a 6 hour drive – alone! I’m looking forward to it!

Cooking

You know when you have a friend that has a new baby (or two?) everyone rallies and brings warm home cooked meals to them for however long they think they need them? It’s nice to have that for the first couple of weeks when everyone is sleep deprived and trying to get into the new schedule and the newness of having a baby! It’s a blessing for sure. I’ve been blessed to have my friends bring yummy food, and I’ve been blessed to be able to make food for friends!

That’s a great thing if you’re part of a church or have friends and family around to help out! But what if you don’t? It’s good to plan ahead. There are lots of meals that can be made ahead of time and frozen, as long as you have the space to store them!

What if you just like to cook (which I’m finding I really do) and want to make some food that you can put in your freezer and have for a day when you DON’T feel like cooking? Here are some dishes I made that are all freezable. I made 6 main dishes the other day it was fun and didn’t take as long as I thought it would - although it did take about 4 or 5 hours. I did some prep-work the day before, such as thawing meats and cleaning chicken. But the dishes were all put together and baked in one afternoon.

Here is a list of the dishes I made – pretty simple ones and very yummy! I am not going to post each recipe so if there’s one you would like that’s not listed, please let me know.

Enjoy and happy cooking (and freezing!)

Bruschetta Chicken Bake - Kraft Food & Family
1 14 1/2oz can diced tomatoes, undrained
1 6oz package of Stove Top mix for chicken
½ cup water
2 cloves garlic, minced
1½ lbs. chicken breast – cut into bite sized pieces
1 tsp. dried basil leaves
1 cup 2% shredded mozzarella cheese

Pre-heat oven to 400 degrees. Place tomatoes with liquid in medium bowl. Add stuffing mix, water and garlic and stir until stuffing is moistened. Set aside.

Place chicken in 9 X 13in baking dish. Sprinkle with cheese and basil. Top with stuffing mix.

Bake 30 minutes or until chicken is cooked through.
This reheats very well!


Cheesy Beef Stroganoff
Chicken in Cream Sauce
Upside –down pizza Casserole
Parmesan Chicken

Ham & Cheese Ziti – Linda Miller (my mom)
2½ cups uncooked ziti
¼ cup butter or margarine
1 garlic clove finely chopped
¼ cup all purpose flour
½ tsp. salt
2 cups milk
½ tsp. Dijon mustard
2 cups shredded Colby cheese
4oz sliced cooked deli ham, cut into thin strips
1/3 cup grated parmesan cheese

Heat oven to 350 degrees. Cook and drain pasta

While pasta is cooking melt butter in 3 quart saucepan over low heat. Cook garlic in butter 30 seconds, stirring frequently. Stir in flour and salt, cook over medium heat, stirring until smooth and bubbly. Gradually stir in milk. Heat to a boil, stirring constantly, boil 1 minute. Stir in mustard and cheese. Cook, stir until cheese is melted.

Stir in pasta and ham. Pour into ungreased 2 quart casserole dish. Sprinkle with parmesan cheese.

Bake uncovered 20 – 25 minutes or until bubbly.

I also tried something new this past weekend and made my own salsa. I don’t have my own garden – because I cannot keep any living plant alive – so I went to the local Farmers Market and got all the fresh ingredients! I used a recipe (from a Pillsbury book), and it turned out OK, but next time I do it (which I will again before all the wonderful fresh tomatoes are out of season!) I’ll add a few more of this and a dash more of that just to give it a bit more flavor. I chose this recipe because it didn’t require canning and all that stuff. I’ve never canned anything (but I think I’m working up my courage to try it) so I wanted a recipe that I could make and eat right then. Cook and learn - here’s a picture of the salsa!

Friendship

I am so enjoying our sermon series at church from Proverbs. I have learned so much from just reading through the book itself and learning so much more from the sermons. To hear yesterday’s sermon click here. It’s about friendship and it’s awesome!

I realized a good many things during this sermon. First – I have really amazing friends! Really amazing! I’m so blessed. Second – it’s easy to want, see and need all the right things in a friend, and sometimes really hard to BE that kind of friend! Third – Jesus is the best friend I could ever have! Sometimes I forget that. Sometimes I get down, think no one loves me the best, no one thinks I’m funny, or fun to be with or whatever ridiculous thing I’m thinking at the time (I’m gonna blame it mostly on PMS!) but those things aren’t true (not for my earthly friends either) because I know that Jesus loves me so much – He gave his life on the cross FOR ME. Now that’s true friendship.

So I always have a friend, and I always have an example of what a friend should be in Jesus Christ.

My Spoils

I had a really wonderful relaxing time with David while we were away! It was nice – albeit unusually quiet – to have to worry only about myself and do whatever I wanted! I really enjoyed Starbucks at breakfast and a nice dinner with David each day! It’s so different to just “go” somewhere. No getting everyone ready, no packing a diaper bag, no worrying about bath and bed time, it was really nice! I was blessed to be able to go and spend time all alone and to spend some time with my man! It was fun for sure!

I got to lay out by the pool take in some sun (got a bit burned in the places I didn’t reach too well on my own!), read a whole book – up the whole thing – all in one day! Had a nice dinner and visited the new IKEA store! It was fun!

Then the next day it was off to Concord Mills! I was so excited to go shopping – ALL DAY long if I wanted too – that I arrived before it was even open! I made several great purchases! It was a fun day! Here are some pictures of the things I bought!

Cornelius, NC

Greetings from Cornelius, NC!! Doesn’t sound like a big place, well it’s not! But there’s a lot more here than either David or I expected!

We arrived in town late last evening. We stopped on the way into town and had a wonderful quiet dinner. After locating the place where David would be taking his class we got checked into our hotel. It’s nothing fancy – a Comfort Inn, but it’s very clean, and nice! I even checked out the pool last night – looks great!

We had a good night’s sleep then we started our day off with some Starbucks. We sat outside enjoying the beautiful morning chatting and enjoying the calmness of the morning – not something we’re used to!

Now I’m back at the hotel, have done my devotions and I plan on going down to the pool with my books just as soon as I’m done this post!

I’m so thankful to my in-laws and my wonderful friends – the Lowe’s for keeping the kids for me so I could come and spend a couple of days to myself! Those kinds of days are few and far between for most moms! I’m especially thankful for these couple of days! I miss my little ones, but know they are in good hands, being loved and having fun, so I will do the same!

I hear the sunshine and lounge chair calling me!

July 4, 2009

As we approach the July 4th holiday I would like to send out a sincere thank you to all of the men and women, and their families who have sacrificed over the years for my freedom.

Tomorrow as I celebrate my country’s freedom by reading my Bible, praying with my family and talking openly about God and any other subject we would want to talk about - I will remember those who have given their lives, time away from their own families, their limbs and many other things that I couldn’t even begin to know about in order for me to be free!

I would also encourage each of you to stand up, be proud and speak out for the things you believe in. Take the time to thank a vet or send a card, care package or a note of thanks to someone currently serving to keep our homes safe and our rights free!

Thank you to all of you serving in our Armed Forces for your commitment to our country and protecting my freedoms!

Happy 4th of July!

Time Together

A whole week home and I’m still wishing I was back doing some jet skiing, swimming in refreshing lake water, swinging on the rope swing and long lazy days of vacation at the lake! I guess I need to get my head back into the game and get on with life, hu? Vacations over – I guess I’ll have to look forward to our date night tonight and 2 days away with my hubby next week!

I have the privilege of going with David to Cornelius. Where is that you may ask, and that is a good question. Cornelius, NC is over near Charlotte, NC just a bit north. David won a class – yes won, like called in a radio program and won a 2 day class on investing (why David was listening to an AM radio program on investing would require a whole different post!;-)) down there and I get to go along! Thanks to my wonderful in-laws who are keeping Luke, and our good friends the Lowe’s who are keeping Avery - I get to go along and enjoy 2 solid days to myself!

What will I do with myself? Well, first it’s July, and the hotel we’re staying at has a pool and second I placed an order with Amazon and 5 new books arrived yesterday… so I’ll be out in the sunshine, by the pool with my books and I’m SO EXCITED! Also, I should mention that we won’t be very far from Concord Mills – and so I will be doing some shopping as well!!!!!!!!!! Double YIPPIE!

I’m really looking forward to this little trip! David gets to do something he loves, and I get to just sit and relax and read. And then in the evening after his class is over, I’m looking forward to having dinner with my man!

And for something different we are going on a “real date” tonight! We’re actually gonna go see a movie and go to dinner tonight. I’m not sure I can remember the last movie I saw in the theater! I’m also going to get a pedicure!! It’ll be a fun night! Thanks again to the Grandparents Winslow’s!
